Chilli Coconut Panko Prawns

These are really simple but really tasty, you can easily modify them by adding some lime zest or using sweet chilli sauce instead of beaten egg, I’ve even done a version with toasted coconut flakes and fresh chilli. I also did a version of these with added chilli and breadcrumbs in the batter for extra crunch

Ingredients

  • 1 packet of raw, peeled, king prawns
  • Panko Breadcrumbs (Morrisons now sell them in nice big bags)
  • 1 egg, beaten
  • 2 tbsp dessicated coconut
  • Pinch of salt
  • Pinch of pepper
  • 1 tsp chilli flakes.
  • 1 tbsp plain flour

Method

  1. De vein your prawns if needed.
  2. Put the breadcrumbs in a bowl, season with salt and pepper, add the coconut and chilli.
  3. Dip the prawns in the flour, followed by the egg then the breadcrubs, repeat if the breadcrumbs don’t stick so well.
  4. Deep fry until crips and golden.

Hi

Came accross your blog whilst trying to decide on a pizza oven, just wondered if you could have got the amigo oven in, would it have been your first choice?

Love your recipes too and looking at your coconut prawns, I can reccomend making a dip of creamed horseradish and marmalade, try it it really does work!!

Hi Simon, after having the mezzo in for over a year now i’m not sure. It depends on what you want from your oven, I love the flexibility of the Mezzo, as it stands it’s in it’s raw form but could easily be insulated and decorated so that it would hold the heat as long as the amigo, although 12/14 hours heat isn’t something i think i’d use to be honest, and it’s easy enough to chuck a couple of logs in to keep the heat up.

If you think you’d use the spit roast feature of the amigo then that’s something to consider, i’m toying with the idea of getting a stand made for inside the oven to put a spit on but not sure how much use it would get.

I like the sound of the horseraddish, ill have to try that.
